Pineapple Upside-Down Cake
3 Tbsp. butter
1 cup brown sugar
1 8-oz. can sliced pineapple, drained
1 yellow cake mix or pineapple cake mix

3-Qt. Casserole
Preheat oven to 350°F. Put butter in casserole and
microwave until melted. Sprinkle brown sugar over
butter. Lay pineapple slices on bottom of dish.
Prepare cake mix according to package instructions
and pour batter over pineapple and brown sugar.
Cover with glass lid and bake for about 55 minutes
or until done. Or, cover and microwave on high for
10-14 minutes. Cool or serve warm. Serves 12.
Variation: Prepare cake mix using pineapple juice
instead of water.
