Summer Salad with Pineapple Vinaigrette
6 slices bacon
1/4 cup pineapple juice
3 Tbsp. red wine vinegar
1/4 cup olive oil
Salt and freshly ground black pepper to taste
1 10-ounce package chopped romaine lettuce
1 cup fresh or canned pineapple, diced and drained
1/2 cup macadamia nuts, chopped and toasted
3 green onions, chopped
1/4 cup flaked coconut, toasted

Cook bacon in Princess Heritage Stainless Steel 10" Sauté Pan over medium-high heat until evenly browned. Drain, crumble and set aside. In Fantasia Cruet, combine pineapple juice, red wine vinegar, oil, salt and pepper. Cover and shake well. In Fantasia Serving Bowl, toss
lettuce, pineapple, macadamia nuts, green onions and bacon. Pour dressing over salad and toss with Barrington Salad Servers to coat. Garnish with toasted coconut and serve in Fantasia Pasta Bowls. Serves 6.
